Global comfort-food foundations, masa, braises, spice systems, and cultural recipe context

Valeria Muñoz

Culinary Researcher

I approach comfort food from first principles: starch carries memory, fat distributes aroma, acid restores appetite, and heat shapes tenderness. My research at the University of Texas focused on foodways and migration, and I use that foundation to explain why birria, arepas, dumplings, and stews feel both deeply local and instantly welcoming.
