Todd Nelson, Chef and Co-Owner of Park & Main Quality Food, made a special recipe on The Weather Channel's AMHQ with Sam Champion. This quick, easy recipe featuring roasted Autumn Squash and Sage is the perfect hot breakfast on a chilly fall morning!

Autumn Squash & Sage Scrambled Egg Bruschetta

Yield: 1 Serving
3 Slices Grilled Bread (Ciabatta Recommended)
1 tsp Butter
2 Eggs, Beaten
3 Sage Leaves, Thinly Sliced
1/4 Cup Roasted Autumn Squash
1 oz. Fontina or Choice of Semi Soft Cheese
Salt & Pepper to taste
Fresh Chives for Garnish

1. Grill bread and set to the side
2. Melt butter in skillet over medium heat. Add sage & squash, stirring frequently until heated through.
3. Stir in beaten eggs.
4. As eggs begin to set, add Fontina & season to taste.
5. Place eggs mixture evenly on grilled bread & garnish with chives. Enjoy!
